Those of you who've been reading this blog for years surely remember what a love I have for food & cooking, although like with writing, my desire to do so comes and goes. Sometimes I'm completely uninspired to even stand near my kitchen, and then others like in these last few months, I'm over the stove trying to whip up a new recipe every other night. Honestly, few things bring me more joy, especially when I get to cook for others and see how much they enjoy it. Wifey instincts, what can I say? Just a few nights ago I was really craving blueberry pie, so I looked over a few different recipes and threw together the simplest, most delicious version my little heart could have ever desired. For starters, it's open-faced, so all you need is a frozen, baked pie-shell (I'm not about that homemade dough life, sadly) and the filling:
- 4 cups fresh blueberries
- 1/2 cup water
- 1/2 cup sugar
- 2 tbsp cornstarch dissolved in water
- lemon zest
- lemon juice
Boil 1 cup of blueberries with the 1/2 cup of water until the berries start to burst, then stir in lemon zest, juice, and sugar. I personally like my pie with a bit more tartness, so I was pretty liberal with the lemon, but you should adjust to taste. Same goes for the sugar - 1/2 cup is perfect but you could even add a little less if you watch out for that sort of shit, the sweetness should still be there. Mix in the dissolved cornstarch, then when combined add remaining blueberries and let everything simmer until it's got a good thick consistency. Finally pour into cooled pie crust and let rest/set a few hours before serving. I dug into it right away because I couldn't help myself but it was even better the days after. Too fucking easy, now get to it shawty!
